A fleshy and juicy red with aromas of sweet ripe plums and cherries. The palate shows ripe fruit-forward characters of cherry and wild plum and the ripe rounded finish is balanced by fresh bramble acidity.
This wine is a rediscovery of the old tradition of using partially-dried grapes to add richness and concentration. The Barbera grapes were grown on southwest-facing slopes in the Monferrato hills, at 250-400m altitude. Soils here are clay and limestone. Following the traditional passito technique – a portion of ripe Barbera grapes (around 20%), left on the vine for nearly a month after the main harvest to sun dry, were blended with fresh Barbera grapes before fermentation. This sweetens, enriches and softens the resulting acidity.
A good match for roast poultry or game, or rich stews and pasta dishes.

Its thick skin and small berry size, can both ripen beautifully or over-ripen whilst retaining its acidity and shunning the advances of botrytis, giving both dry and sweet wines.To show this fascinating variety at its best, Boutinot have made two wines and blended them together: a bright and zingy Gros Manseng fermented to dryness into which Boutinot have blended a smaller proportion of late harvest Gros Manseng, bringing with it a delightful fruitiness and exotic spice.
This makes for a mega apéritif, otherwise try with stinky cheeses and aromatic middle-eastern and eastern cuisines.
This luscious and textural blend is very much a food wine; rich currant flavours provided by Grenache and tangy raspberry from Cinsault before a dry and fresh finish. The grapes are sourced from vineyards cultivated near to Lake Thau, set in a formerly volcanic region just inland from the sea. This has a particular micro-climate – as the proximity of the water has a moderating effect on the typically Mediterranean temperatures, allowing optimal ripening whilst retaining fresh acidity. The grapes are harvested in the early morning, then the wine is vinified as a classic rosé de presse, with soft pressing and cold fermentation.
Pairs well with pasta dishes, barbeques and grilled chicken salads.
